The Road Trip Pt.2- The Grub (Or lack there of)

Last week I talked about the music from my road trip a couple weeks ago, and this week I'm going to talk about the (lack of) food.
I have one word for you: Eggs.

We were only on the road for two days, so there wasn't that much suffering to be had. Whenever I cook eggs they never turn out exactly how I expect. It's like every time I eat them, it falls just short from being right what I want. I also don't want to cover it in cheese. That's just masking the eggs, and if I wanted to eat cheese I'd just eat cheese. This egg logic only applies to scrambled eggs though; omelets are the bomb, and even the bad ones are at least pretty good. I don't eat eggs for breakfast on a regular basis (hardly ever really), and I'm more of a turkey sausage kind of girl, but there weren't a lot of options to choose from on the roads of California.

Day 1 proved me wrong. I had a pretty great breakfast that day.
Since my dance season ended, I have been more careful about what I eat, and I have been very insistent on integrating exercise into my day to day like. With a road trip, that's super difficult to keep a handle on, even if it is only for two days. Fast food is everywhere; even when you're in the middle of nowhere there's a McDonald's somewhere nearby. McDonald's is only an exit away. Then there's gas stations that only offer candy and chips. So when it came time for me to have breakfast on the first day, I opted for eggs and some protein. Despite my distaste for them I knew they would keep me pretty full, and since my second meal of the day would more than likely be something of the fast food persuasion, I thought this would be the best choice.
The first breakfast was great, as you could probably guess in the photos above. The flavor of the eggs were accentuated by the addition of onions and tomatoes; no salt and pepper were needed. Following that with some sausage and grapefruit, and day one was off to a great start. I drive 10 hours that day, and I'll partially attribute that energy to this breakfast. I think (...I know) later that day we stopped for chicken nuggets or something similar, but we were good for the rest of the day and into the next morning.

Day 2 proved me right. And I was just starting to feel better about this...
No. Just no. There were a lot of issues with this particular hotel on day two, but the breakfast? Don't mess with the food, man. I fell prey to a Carl's Jr number whatever, and I totally am placing the burden of blame on this breakfast. The sausage was too crisp and a little tough, but I could deal with that. That egg though? Lukewarm with a flimsy, half-melted piece of cheese on its underside. And it was...dewy? I'm not going to keep talking about this p.o.s. breakfast, so I'll do something else instead.
I'll leave you with something. A simple recipe for simple scrambled eggs. For most of my life, I thought fried eggs weere the same as scrambled eggs. Not the case. So when I found a basic recipe for scrambles, I enjoyed the lightness of them and decided to keep it under my belt. I still use salt and pepper, but these do taste good to me.
What You Need:
A bowl
A fork
2 Eggs
Tbsp Olive Oil
1/4 cup of a cream based product (meaning Sour Cream, Milk, Heavy Cream, etc.)
Salt and Pepper to taste.
What You Do:
Heat the olive oil on low-medium heat.
In the meanwhile, take your two eggs and crack them in a bowl. Use the fork to beat your eggs for about a minute. You want to eggs to get a lot of air bubbles in them, because this will make them fluffier.
Once you've beaten the eggs, add the cream/milk and then beat again until everything is uniform throughout.
Now pour your eggs into the heated skillet. Wait about 3o seconds and then drag your fork across the skillet, bringing cooked egg along with it. Move the skillet around so that the still liquid egg fills the space where the cooked egg used to be. Continue this until all the liquid is gone.
Add a little salt and pepper if you wish, and there you go!
